THE husband and wife team behind Colonsay Gin are celebrating the summer with a “citrusy and herbal” cocktail – Colonsay Bees Knees – which pays homage to the island’s native population of rare Black Bees.
50ml Colonsay Gin
20ml fresh lemon juice
20ml fresh orange juice
2 teaspoons Colonsay Honey & Thyme Syrup (100ml honey, 100ml water, 3 to 4 sprigs of thyme)
Put the gin and honey into a cocktail shaker and stir to dissolve the honey.
Add the lemon and orange juice and top with ice.
Strain the mixture into a chilled Martini glass and serve. Alternatively, strain into a tall glass with ice for a less sweet drink.
