CAPITAL chef Paul Tamburrini has launched his latest venture inside Edinburgh’s Macdonald Holyrood Hotel.

Bistro Deluxe by Paul Tamburrini opened its doors to the public on Friday October 6 and features the chef’s signature blend of French cuisine and quality ingredients, including Aberdeen Angus beef, Lindisfarne oysters and French rabbit.

The fine dining bistro, in the city’s old town, is the result of a partnership between Macdonald Hotels and Tamburrini, who was previously chef director at Martin Wishart’s The Honours Brasserie.

Ruaridh Macdonald, deputy chief executive at Macdonald Hotels, said: “We’re confident the new restaurant at Macdonald Holyrood Hotel will be firmly positioned on the city’s culinary map for visitors and locals to savour.”

Tamburrini said the new restaurant will “showcase a progressive and forward-thinking menu, using the best local suppliers and producers, with incredible attention to detail and flavour sensations in each dish”.

The hotel was recently subject to a £3 million renovation.
