A NEW Lanark hotel has brought the feminine touch to its kitchen with the appointment of a new head chef.

Linsey Scott joins the New Lanark Mill Hotel from Aurora Hotel Collection to preside over a female-dominated kitchen team.
The team, consisting of chefs Barbara Connolly, Robynne Greenshields, Sarah Henderson and Amy North, along with commis chef Jamie Donaldson and junior sous chef Leon McIntyre, will help Scott prepare a menu that she describes as “delicious unpretentious dishes, generous portions, beautifully presented”.
“People have a more down-to-earth culinary mind-set nowadays and I’m delighted that Linsey is overseeing a shift away from stuffier dining towards unfussy real food at affordable prices,” said general manager John Stirrat.
“With her award-winning background, I know she and her team will create a fantastic new dining experience at New Lanark.”
Scott joins the hotel having picked up a number of catering awards, including the title of Hotel Executive Chef Médaille d’Or at this year’s Scottish Hotel Awards.
Scott described her kitchen team as “full of enthusiasm, passion and drive – exactly what you need in a top chef”.
“It’s my job to lead and advise them. I always tell them to think first of all about seasonality, local produce, flavours, textures and how it’s going to look on the plate,” she said.
“And most important of all, when you’ve cooked it, taste it. It’s amazing how many chefs don’t do that; you have to put yourself in the shoes of the person eating it.”
