New chef takes the helm at Summer Isles

A WESTER Ross hotel has appointed a new head chef for the first time since 1986.

David Malcolm has taken over from Chris Firth-Bernard at the Summer Isles Hotel in Achiltibuie.
David, who was previously at the Michelin-star Greenhouse restaurant in London’s Mayfair, said: “Chris’s shoes will be very hard to fill as he helped build up the Summer Isles’ outstanding international reputation for top quality dining.
“My style is more modern while continuing to make use of the finest local produce.”
